La Casa Restaurant and Bar: Churros

While this popular Mexican eatery has had different owners over the years, it has been a Sonoma staple since 1967. Longtime readers say the cinnamon smell of churros would permeate the block.

Ingredients:

1 cup water

1 tablespoon vegetable oil

1 tablespoon sugar

¼ teaspoon cinnamon

½ teaspoon salt

1 cup flour

1 egg

Cinnamon-sugar for dusting

Intructions:

Boil water and add oil, sugar, cinnamon and salt. Add flour all at once, stirring until smooth. Remove from heat and mix in egg. Scoop batter into a pastry bag with a thick tip. Heat about 2-inches of oil in a large skillet. Squeeze dough through pastry bag into the hot oil in a spiral motion (or be creative in your shape). Cook until the bubbles subside, about 3 minutes. Remove from oil and drain on paper towels. Sprinkle with cinnamon-sugar.
