Olive expert Don Landis will talk about how to de-bitter olives from 11 a.m. to 1 p.m. Sunday, Jan. 5, at Cline Cellars, 24737 Arnold Drive in Sonoma.

Landis will talk about the history of the olive, the history of the olive in California and give a thorough description of how to de-bitter the olive to make it edible without lye.

A discussion of the many varieties of olives, when to pick and other important tips will be covered.

Landis will discuss the three ways to de-bitter olives – the Greek style brine, water and dry salt methods with demonstrations making the whole process easy for all.
