Wine Country Dinner Salad

Ingredients:

1/2 avocado per person
4 prawns, poached in white wine and garlic, per person
Butter or limestone lettuce
Finely shredded beets, carrots, red onions and celery root (celeriac)
Cucumbers, thinly sliced
Artichoke bottoms
Button mushrooms
Asparagus)
Cherry tomatoes
Rice wine vinegar
Tarragon cream dressing

Preparation - Directions:

Place lettuce on individual plates with avocado in the center. Arrange other ingredients decoratively around avocado. Add tarragon cream dressing to the avocado and rice wine vinegar to the rest of the salad.
Tarragon Cream Dressing
1/2 cup whipping cream
1 t. tarragon leaves soaked for 30 minutes in 2 T. white wine vinegar
1/8 t. salt)
1/8 t. white pepper
1/8 t. sugar
Whip cream until slightly thick. Add remaining ingredients, whip two minutes. Dressing should be thick but pourable.
