Vegetable Spaghetti

Ingredients:

2 carrots, diced
2 green peppers, diced
2 stalks celery, diced
1 onion, diced
1/2 lb. mushrooms, sliced
1 bunch fresh spinach, washed and finely chopped
2 or 3 cloves garlic, minced
1/2 cup water
2 T. butter or margarine
2 T. olive oil
1/2 t. fennel seeds
1 t. basil
4 8 oz. cans tomato sauce
salt to taste
3/4 lb. spaghetti or macaroni
shredded Jack cheese (optional)

Preparation - Directions:

Saute all vegetables except mushrooms and spinach in butter and olive oil for about 10 minutes. Add tomato sauce, water, fennel, basil and mushrooms. Cover and simmer stirring occasionally for about 25 minutes until vegetables are tender. During last 5 minutes of cooking, add the chopped spinach. Cook about 3/4 pound spaghetti according to package directions. When done, drain well and mix with sauce. Top with shredded jack cheese if desired.
