Tropical Ceviche

Ingredients:

4 lbs. rock shrimp (79s-90s)
27 oz, coconut milk
1 cup of jalape"os, chopped
1/4 cup kosher salt
2 cups simple syrup (2 cups water, 1 cup sugar – heat to dissolve)
2 cups fresh lime juice

Preparation - Directions:

Mix all ingredients together and refrigerate for 20 minutes. Add fresh tomato, mango, avocado or any of your favorite tropical fruits and serve.
