Sweet and Sour Sauce

Ingredients:

2 cloves of garlic
1 t. shredded ginger root
2 T. oil
1 cup finely chopped mixed vegetables (carrot, mushrooms, green pepper, onion)
1 cup brown sugar
1/2 cup red wine vinegar
1/2 cup water
2 T. soy sauce
2 T. corn starch
1/2 small can chopped pineapple
1/2 cup coarsely chopped bell pepper

Preparation - Directions:

Heat oil in wok or skillet. Stir fry garlic and ginger root for 30 seconds. Add vegetables stirring and cooking until soft. Add sugar, vinegar, soy sauce and half of the water. Make a paste with cornstarch and remaining water. Add to mixture and cook until thick and bubbly. Remove from heat. Add pineapple with juice and bell pepper. Serve with homemade wontons or egg rolls.
