Sunshine Salad

Ingredients:

1 pkg. lemon flavored gelatin
1 cup boiling water
1 cup canned pineapple juice (drained from fruit)
1 T. vinegar
1/2 t. salt
1 cup grated raw carrots
1 cup drained, crushed or cubed canned pineapple
Salad greens

Preparation - Directions:

Dissolve gelatin in boiling water. Add pineapple juice, vinegar and salt. Chill until mixture begins to thicken. Add pineapple and carrot and turn into individual molds. Chill, unmold and serve on a bed of crisp salad greens. 6 servings.
