Stuffed Turkey Rolls with Lemon Sauce

Ingredients:

8 thin slices turkey breast
2 oz. Ham, cut in 2 inch matchstick pieces
2 oz. carrot, cut in 2-inch matchstick pieces
3 green onions, including tops, cut diagonally in 2-inch pieces
Thyme
Salt (if desired
1/2 cup sherry
Oil
SAUCE:
5 oz. Water
2-1/2 T. fresh lemon juice
5 t. sugar
4 t. sugar
4 t. soy sauce
4 t. sherry
1 t. garlic, finely chopped
2 t. cornstarch mixed with 2 t. water

Preparation - Directions:

Gently pound each turkey slice. Sprinkled with salt (if desired) and thyme.

Lay a few stripes of each of the carrot, ham and green onion across the turkey slice (zucchini, yellow onion or other vegetables may be added or substituted).
Roll the turkey slice and secure with toothpicks. Brown the rolls in moderately hot oil. When browned all over, turn down heat and add sherry to pan. Cover and let steam 10 minutes.
To a small pan add all sauce ingredients except cornstarch. Bring to a boil over high heat. Taste to adjust flavor to your liking. Add more sugar if too tart. After adjustment, add cornstarch, stirring to thicken. Turn heat down and simmer one minute. Pour sauce over turkey rolls. Serve with rice and green vegetable.
Lemon sauce may be substituted with Orange Sauce or Plum Sauce.
