Sole Stuffed with Shrimp a la Darcy

Ingredients:

6 large pieces fillet sole
1 lb. fresh shrimp
6 toothpicks
2 large eggs
1 cup oil or 1/2 cup oil and 1/2 cup butter
2 cup dry whole wheat bread crumbs

Preparation - Directions:

Flatten the sole between wax paper then fill with about 1-1/2 tablespoons shrimp. Roll from small end and secure with toothpick. When all are finished, pat dry with paper towel.
Beat eggs with beater to mix well and place in soup bowl. Put the bread crumbs in another soup bowl. Dip rolls in egg, being sure to cover well. Let excess drip off, then dip in bread crumbs. Shake off excess. Let dry 15 minutes. Then fry until light brown on all sides. Then place in baking dish and bake at 350° for 25 minutes. Serve with Bearnaise sauce.
