Secret Spuds

Ingredients:

10 medium potatoes, peeled
2 medium onions, chopped
8 oz. sour cream
8 oz. softened cream cheese
1 cup heavy cream
1 cup grated cheddar cheese
Minced parsley
1/2 cup chopped pecans

Preparation - Directions:

Preheat oven to 350°, less 25 for convection. Boil potatoes and onions until tender, separately. Drain and wash, mix in the sour cream and cream cheese, blend until very smooth. Put into prepared buttered baking dish. Sprinkle parsley and nuts on top. Whip cream, fold in the grated cheese, spread evenly on top of potatoes. Bake approximately 45 minutes. Do not overbake.
