Saffron Snapper

Ingredients:

4 fillets of red snapper
2 T. virgin olive oil
1 medium leek, chopped
1 clove of garlic, chopped
1 tomato, chopped
1 bottle of clam juice
1 pinch of saffron
Salt and pepper to taste
1 lemon and a sprig of parsley for decoration.

Preparation - Directions:

Place olive oil in a skillet. Add the chopped leek tomato and garlic and cook until the vegetables are limp. Add the clam juice and spices and bring to a boil. Add the fish fillets and cook until done (about 8 minutes). When the fish is done, place it on a serving platter, cover it with the sauce and the vegetable and decorate with lemon slices and parsley. Serve with steamed rice or potatoes.
