Saffron Snapper |

| Ingredients: | 4 fillets of red snapper |
| Preparation - Directions: | Place olive oil in a skillet. Add the chopped leek tomato and garlic and cook until the vegetables are limp. Add the clam juice and spices and bring to a boil. Add the fish fillets and cook until done (about 8 minutes). When the fish is done, place it on a serving platter, cover it with the sauce and the vegetable and decorate with lemon slices and parsley. Serve with steamed rice or potatoes. |
