Royal Annies

Ingredients:

1) 2-1/2 lb. Royal Anne cherries, washed and pitted
1 cup water
1/2 cup sugar
2) 1/4 cup cherry juice
1/4 cup bourbon
1-1/2 T. quick tapioca
3) 1 cube butter
1 cup brown sugar
1 cup all-purpose flour
1 cup quick cooking oatmeal
1/4 t. baking powder
1/4 t. baking soda
1/4 t. salt
1/2 cup chopped nuts

Preparation - Directions:

1.) Bring water to boil in saucepan; add cherries; reduceĀ  heat to low and cook 3 minutes. Add sugar and cook 3 minutes more. Drain, saving juice.
2.) Mix and let stand while preparing pastry. Preheat oven to 350°.
3.) Melt butter in large, high-sided skillet. Remove from heat and stir in remaining ingredients, blending well. Spread half of this pastry mixture in a square baking pan (9 inch by 9 inch). Blend liquid with cherries and cover bottom layer. Cover with remaining pastry. Bake until firm, 30 to 35 minutes. Cool and cut in squares.
