Roasted Pork Tenderloin with Balsamic Blue Cheese Sauce

Ingredients:

1 pork tenderloin (1 lb.)
Kosher salt
Fresh cracked black pepper
4 pieces of diced cooked bacon
8 oz. balsamic vinegar reduced to 4 oz.
3 oz. blue cheese
3 oz. heavy cream

Preparation - Directions:

Season pork tenderloin well with kosher salt and pepper. Place pork in hot pan on top of stove, with olive oil searing until golden brown.
Preheat oven to 350º and cook pork for 15 minutes or until clear juices appear when pierced, or when temperature of meat reaches 140°. In a small saucepan, mix balsamic vinegar, bacon, blue cheese and cream together. Cook on low heat until melted and mixed well.
Remove pork from oven when internal temperature reaches 140°. Let pork stand for 15 minutes, then cut into 1/2 inch slices. Spoon cheese mixture on top and serve.
