Mushroom Soup

Ingredients:

1 lb. fresh mushrooms
1/2 cup yellow onion
3 T. butter
2 T. instant beef bouillon
2 cups sliced carrots
1 t. salt
1/4 t. ground thyme
1/4 t. ground pepper
1/2 cup Madeira wine
8 cups water

Preparation - Directions:

Chop onions finely and slice mushrooms thinly. Saute them in butter until tender. Simmer them for 10 minutes over low heat. Stir in water, bouillon, carrots and thyme. Bring to a boil, turn heat down to summer for about one hour. Stir in pepper, salt and wine and bring to a boil again. Serve with a bit of fresh parsley on top.
