Mexican Squash

Ingredients:

2 lb. crookneck or zucchini, 8 cups, 1/4 inch slices
1 medium onion, chopped
1 cup sour cream
2 oz. chopped green chilies
1 2 oz. jar chopped pimento
2 cups shredded Jack cheese
1-1/2 cup Nacho tortilla chips, crushed
Paprika

Preparation - Directions:

Cook squash until tender crisp. Saute onion in butter until soft. Combine sour cream, chilies and pimento. Add to squash and onion and mix together. In 12 inch by 7 inch casserole, layer 1/2 squash mixture, 1/2 of cheese, 1/2 of chips. Repeat. Sprinkle with paprika. Bakes 15 minutes at 350°. Serves 4 to 5.
