Lemon Spring

Ingredients:

Juice and rind of 2 lemons
1 cup sugar
1 (rounded) T. flour
3 large eggs, separated
1 cup milk
Pinch of salt

Preparation - Directions:

Mix sugar and juice, blend in the flour. Add beaten egg yolk, then milk and then stiffly beaten egg whites and the pinch of salt. Mix together. Pour into a buttered, 1 quart baking dish. Set in a pan of warm water and bake in a 275° oven for 1 hour.
This dessert turns out to be a very delicate pudding cake. Serve in dessert glasses topped with whipped cream and a sprinkle of lemon rind.
