Lemon-Glazed Persimmon Bars

Ingredients:

1 cup persimmon pulp with
1-1/2 t. lemon juice
1 t. baking soda
1 egg
1 cup sugar
1/2 cup salad oil
cup raisins
1-3/4 cup unsifted flour
1 t. each salt, cinnamon, nutmeg
1/4 t. ground cloves
Lemon glaze

Lemon Glaze:
1 cup unsifted powdered sugar
2 T. lemon juice

Preparation - Directions:

Bars: Mix persimmon pulp with soda and set aside. In large bowl, beat egg, stir in sugar, oil and raisins. Combine flour with salt, cinnamon, nutmeg and cloves. Add to raisin mixture alternately with persimmon pulp just until well blended. Spread evenly in greased and floured 10 inch by 15 inch pan. Bake 350° about 25 minutes. Spread with lemon glaze. Cool. Cut into bars.
Glaze: Blend until smooth.
