2 cups unsifted flour 1 T. baking powder 1 t. baking soda 1 t. salt 1 t. cinnamon 1/4 t. powdered nutmeg 2 large tart apples, peeled, cored and quartered Peel of 1 large lemon, grated 3/4 cup sugar (granulated) 3 eggs 1/2 cup butter or margarine (cut into small pieces) 1 T. lemon juice 1 t. vanilla

Combine flour, baking powder, soda, salt, cinnamon and nutmeg. Set aside. In food processor: Combine apple and lemon peel in work bowl. Coarsely chop, then puree. Add sugar and eggs and blend 1 minute. Add butter pieces, lemon juice and vanilla and mix one minute. Add dry ingredients blend until just mixed. Spoon into 2 buttered and flour dusted 8 inch by 4 inch loaf pans. Bake 350° 40 to 45 minutes. Cool 10 minutes. Turn out onto rack and cool. Serve at room temperature or slightly warm.
