Lavosh Pinwheels

Ingredients:

FOR BEEF: 1 pkg. Lavosh Armenian cracker bread (not wheat
Mayonnaise
Dijon mustard (optional)
3/4 lb. thinly sliced roast beef
Horseradish cream
1/2 lb. thinly sliced Jack cheese
1 large firm tomato, diced
1 medium red onion, diced
Handful of alfalfa sprouts, washed and drained
Salt and pepper to taste
FOR TURKEY: Substitute turkey for the beef
Substitute smooth spreading cream cheese for the horseradish cream
Add 1 diced avocado

Preparation - Directions:

Check Lavosh to be sure they are not broken. Run one large cracker under warm water on both sides. Lay it on damp kitchen towel and place another damp towel on top. If making several, just layer them on top of each other with damp towel between and on top. Let them set for one hour. Put down a large piece of plastic wrap and set Lavosh on it, sesame side down. Spread lightly with mayonnaise, then lay meat in even layer across entire cracker covering the whole thing. Spread lightly with mustard and horseradish cream. Add layer of cheese, sprinkle tomato, onion and sprouts all around. This will take on the look of a pizza, sort of. Starting at one side roll up tight. Pull plastic wrap up and around and refrigerate. Should be refrigerated at least one hour but can be 18 hours before serving. When ready to serve, slice in 1/2 inch thick slices and lay on plate or platter. This recipe is very versatile. You can really use any kind of lunchmeat and condiments you like. This is an attractive dish that looks like a lot of work, but isn’t. It is an always asked for recipe. You can slice them thicker and use them for sandwiches also. It is great for parties.
