Kona Rica

Ingredients:

1 cup whole grain rice
1 bay leaf
1 T. oil
1 lb. bulk sausage, Italian sweet
1 medium onion, chopped
2 eggs
1 pkg. frozen peas
1 t. sugar
4 grinds fresh black pepper
2 T. Kikkomen Milder soy sauce
2 T. oyster sauce

Preparation - Directions:

Bring 2-1/2 cups water to boil; add rice, bay leaf and oil; stir; reduce heat to low, cover pot and simmer 20 minutes.
Meanwhile, heat a large heavy skillet or wok and slowly brown the sausage, separated into small bits. Remove sausage and drain on paper, discarding all but 2 tablespoons fat. Saute onion in sausage fat.
Separately cook frozen peas by package directions to crisp/tender stage.
To large saucepan, add rice, peas, sugar, eggs and sausage, blending with wooden spoon. Season with freshly ground black pepper, soy and oyster sauces. Serves four generously.
