Jalape"o & Cream Cheese Stuffed Artichoke Hearts

Ingredients:

To fill them:
4 oz. cream cheese (softened)
2 T. chopped fresh jalape"os
Pinch salt, granulated garlic
24 quartered artichoke hearts (the ones found in water), drained well.
To bread them:
3 eggs beaten
1-1/2 cup bread crumbs
Flour for dredging
To fry them:
1 inch oil at 350°
Orange dipping sauce:
1 cup fresh orange juice
3 T. honey
1 T. ketchup

Preparation - Directions:

To fill them: Spoon a little of the filling onto each artichoke quarter and place on parchment-paper-lined cookie sheet and freeze to set.
To bread them: Take artichokes out of freezer and, one at a time, place in flour, then egg, then bread crumbs. Place back onto cookie sheet and after all have been breaded, place back into freezer in plastic bags. Keep frozen until ready to fry.
To fry them: Heat 1 inch oil to 350°. Deep fry 1 to 3 minutes until golden brown.
Orange dipping sauce: Mix orange juice and honey, simmer in non-stick saucepan on medium until reduced by half. Add ketchup and pinch of salt to taste. Serve on the side for dipping.
Please note: You can fill and freeze a few days in advance, or fry in the morning and re-heat later for the party.
