Jack-C-Pinto

Ingredients:

2 cups pinto beans
1/2 cup brown rice
2 cloves garlic, crushed
4 T. vinegar
1 T. chili powder
2 dashes cayenne
Salt to taste
1 bell pepper, diced
1 onion diced
1/2 cup Jack cheese grated per bowl

Preparation - Directions:

Add beans, rice and garlic to a 2 quart sauce pan and cover with water to two inches above beans. Bring to boil, lower heat and summer 1-1/2 hours or until tender. Stir beans periodically and keep water level 2 inches above beans. Add vinegar, chili powder, cayenne and salt. Grate cheese into individual bowls, pour beans over cheese, sprinkle desired amount of bell pepper and onion on top. Makes 4 servings.
