J.D.’s Walnut Lemon Krumkakes

Ingredients:

1/2 cup butter
1 cup confectioner sugar
6 large egg whites
1 cup flour
1/4 t. walnut flavor extract
zest from 1 lemon (just the yellow)
juice of 1/2 medium size lemon
6 T. finely ground walnuts

Preparation - Directions:

Blend butter and confectioner sugar at medium speed until well blended. Combine eggs, ground walnuts, lemon zest, walnut flavoring, lemon juice with mixed butter and confectioner sugar and mix at medium speed for 5 minutes, until well blended. Add flour a little at a time.
Heat Krumkake Iron over medium heat. Brush with melted butter only once. Put one teaspoon of batter on iron, close and cook for 2 minutes, turn and cook or 2 minutes until brown. Remove and cool on a wooden cone and cool on a rack. Makes about 25 krumkakes. Serve with whipped cream and fresh berries. Enjoy.
