Irish Cream Cream Puff Ring

Ingredients:

1 cup water
1/2 cup butter
1 t. sugar
1/8 t. salt
1 cup flour
4 eggs
2 T. sliced almonds
Confectioner’s sugar
CREAM FILLING:
1 pkg. (3-1/4 oz.) instant vanilla pudding mix
1 cup whipped cream
1 cup milk
1/4 cup Bailey’s Irish Cream

Preparation - Directions:

Grease and flour a large baking sheet. Trace an 8-inch circle on the sheet. In medium saucepan heat water, butter, sugar and salt to full boil. Sir in flour. Cook, stirring until paste forms a ball and leaves the sides of the pan. Remove from heat. By hand, beat in eggs one at a time, until paste is smooth and shiny. Spoon around inside line of circle trying to mound the dough high instead of wide. Sprinkle with almonds. Bake in pre-heated oven at 350° for 50 to 60 minutes, checking frequently, until browned and firm. Place on rack to cool. Make cream filling.
Filling: In large bowl, beat ingredients on high with mixer until smooth and thick, about 5 minutes.
Split the cooled ring in half, fill with Cream Filling, put top back on and dust lightly with confectioner’s sugar. The perfect garnish is a few colorful flowers in the center.
