Ham Hocks & Beans

Ingredients:

1-1/ lb. Great Northern or white beans (Soak 24 hours to soften)
2 cans chicken broth
1 can beef broth
1/2 lb. salt pork (half sliced, half chopped)
2 ham hocks, quartered
4 t. paprika
5 cloves garlic diced
3 stalks celery (sliced)
3 large carrots (sliced)
Salt and pepper to taste

Preparation - Directions:

Simmer 3 hours to cook down – add water or cover. Add beans and cook until tender (1-plus hours). Then add 2 tablespoons vinegar to arrest bean fatigue.
