Frozen Mint Cups

Ingredients:

1 cup butter2 cups powdered sugar
4 (1-oz.) squares baking chocolate
4 eggs
1 t. peppermint extract
2 t. vanilla
1 cup crushed vanilla wafers

Preparation - Directions:

Cream together butter and powdered sugar. Melt chocolate and let cool a bit. Add to the butter and sugar. Beat 3 minutes. Add eggs one at a time and beat after each one. Add peppermint and beat and then the vanilla and beat.
Sprinkle about a teaspoon of vanilla wafer crumbs in the bottoms of paper baking cups and place in muffin tins. Fill cups with chocolate mixture. Sprinkle more crumbs on top. Place in freezer. Remove from freezer about 10 minutes before serving. Decorate with whipped cream and cherry.
