Dixie Grits Casserole

Ingredients:

1-1/4 cup quick cooking grits
4 cups boiling water
1/2 t. salt
8 oz. sharp cheddar cheese, shredded
1/3 cup butter or margarine
1/4 t. garlic salt
Dash of ground red pepper
3 eggs
1/2 cup milk

Preparation - Directions:

Preheat oven to 325°. Grease a shallow 1-1/2 quart baking dish. In a large sauce pan, slowly stir grits into boiling salted water. Return to a boil, reduce heat and simmer for 10 minutes, stirring constantly. Remove from heat and stir in cheese, butter or margarine, garlic salt and red pepper until cheese melts.
In a small bowl, beat eggs and milk until well blended. Stir into grits mixture. Pour into baking dish. Bake for 60 to 70 minutes or until golden. Let stand for 10 minutes before serving. Makes 8 servings.
