Creole Shrimp Rice & Artichoke Salad

Ingredients:

1 pkg. MJB Savory Chicken Rice Mix
1/4 t. chili powder
2 6-oz. jars artichoke hearts
1 stalk celery, chopped
4 lg. green onions, chopped
1 T. cilantro, chopped
1/2 cup mayonnaise
1/4 cup plain yogurt
1/4 t. gumbo file
1/2 lb. (1 cup) bay shrimp, rinsed and blotted

Preparation - Directions:

Cook rice without butter and with chili powder. Cool. Drain marinade off 2 jars artichokes, reserving that of one jar in bowl. Add mayo and yogurt to marinade mix and add rest of ingredients, including cooled rice. Chill before serving.
