Creamy Scalloped Potatoes

Wash and clean leeks well and slice thinly. Peel potatoes and slice thinly. In large casserole dish, layer potatoes, leeks, salt and pepper, leaving about an inch at the top. Pour on heavy cream, cut butter into pats and lay on top. In a 350° oven bake uncovered for 1 hour, take out and sprinkle cheese on top. Reduce heat to 300° and bake 1/2 hour more. Can be made the day ahead.
