Cream of Sorrel Soup

Ingredients:

3 T. butter
1 medium onion, chopped
1 medium potato, peeled, diced
2 cans chicken broth (10-1/2 oz. each)
1 can dry white wine (10-1/2 oz)
4 cups shredded sorrel, stems removed
1/2 pint whipping cream
Salt and white pepper
Sour cream
Nutmeg

Preparation - Directions:

Melt butter in saucepan over medium heat. Add onion and cook until onion is limp but not browned. Stir in potato, chicken broth and wine. Cover and simmer about 20 minutes or until potato mashes easily. Stir in sorrel and cook 3 to 5 minutes. Puree in blender or processor. Return to pan, add cream and salt and white pepper to taste. Place a sheet of plastic wrap on the top of the soup and let cool to room temperature .To serve, ladle into bowls, put about a teaspoon full of sour cream in the middle of each bowl and dust with a little grated or ground nutmeg. Also can be served chilled.
