Crab Quiche

Ingredients:

8 inch pie shell
2 T. shallots or green onions, minced
1 cup fresh crab
3 T. butter
1/4 t. salt and dash of butter
2 T. dry sherry
1/4 cup Swiss cheese, grated
3 eggs
1 cup whipping cream

Preparation - Directions:

Make rich pie shell, part butter. Bake in 400° oven about 10 minutes. Saute shallots or onions in butter until limp, not brown. Add crab, salt, pepper and sherry. Heat for a few minutes. Cool slightly before adding eggs beaten with cream, salt and pepper. Pour into shell. Sprinkle with grated cheese. Bake in upper part of oven at 375° about 25 to 30 minutes until knife inserted in middle comes out clean and quiche is puffed and brown.
