Crab Quiche |

| Ingredients: | 8 inch pie shell |
| Preparation - Directions: | Make rich pie shell, part butter. Bake in 400° oven about 10 minutes. Saute shallots or onions in butter until limp, not brown. Add crab, salt, pepper and sherry. Heat for a few minutes. Cool slightly before adding eggs beaten with cream, salt and pepper. Pour into shell. Sprinkle with grated cheese. Bake in upper part of oven at 375° about 25 to 30 minutes until knife inserted in middle comes out clean and quiche is puffed and brown. |
