Chock-Full-of-Fruit Cobbler Bars

Ingredients:

1/2 cup honey
1/3 cup butter
1-1/4 cup whole wheat flour
1-1/4 cup regular rolled oats
1/2 cup chopped almonds
2 T. sesame seeds
1/2 t. salt
1/2 t. soda

Preparation - Directions:

Apricot filling (recipe below)
In a bowl, heat together honey and butter until smooth. Mix together flour, oats, nuts, sesame seeds, salt and soda. Slowly stir into the honey butter, mixing until well blended.
Press half the mixture into a greased 8-inch square pan. Spread with fruit filling, then crumble remaining oat mixture over top. Bake at 350° oven for 25 to 30 minutes until golden.
Apricot filling: In a pan, combine 6 ounces chopped, dried apricots and 1 cup water. Cover and simmer about 20 minutes or until tender; remove from heat and stir until mixture becomes thick. Mix in 3 tablespoons honey and 3/4 teaspoons almond extract.
Makes 16 bars. These freeze very well.
