Chili Cheese Casserole

Ingredients:

2 4 oz. cans diced green chilies
Dash pepper
2 medium tomatoes, sliced
2/3 cup Half & Half
1/2 t. salt
1 lb. grated cheese, half Jack, half Cheddar
4 egg whites, beaten stiff
4 egg yolks
2 T. flour

Preparation - Directions:

Combine cheeses and chilies. Spread in buttered shallow (approximately 8 inch by 12 inch) casserole. Combine yolks and milk, flour, salt and pepper. Mix well. Fold in beaten egg whites. Pour egg mixture over cheese. Bake 325° 30 minutes. Remove and arrange tomatoes on top. Bake approximately 20 to 30 minutes longer. To serve – cut in squares. Serves 4 to 6.
