Chicken Italian Style

Ingredients:

2 2 lb. chickens, cut into serving pieces
1/4 cup olive oil
1/4 cup butter
1/4 cup minced parsley
1/2 cup chopped onion
1/4 t. cinnamon
1 bay leaf
1 8 oz. can whole tomatoes
10 to 12 canned artichokes, cut in half
2 cups peas
large can whole button mushrooms
white wine to taste

Preparation - Directions:

Brown chicken in oil and butter. Combine wine, parsley, onion, cinnamon, bay leaf and pour over chicken. Salt and pepper to taste. Cook slowly, about 20 minutes. Add the tomatoes, artichokes and peas. Cook another 10 to 15 minutes or until chicken is tender. Serves 6 to 8 persons.
