Whip egg whites. Add sugar, then yolks one at a time, whip cream and fold both mixture together. Then divide in half. Grind walnut and cookies (texture like coarse salt). Separate in 3 equal parts. In a soufflé bowl, spread one-third of ground walnut and cookie mixture. Next spread half of the egg, sugar and cream mixture over nut and cookies. Continue alternating layers, finishing the last with walnut and cookies. Refrigerate overnight to firm.
