Carrot Pie

Ingredients:

Crust:
1-1/2 cup rolled oats
1/2 cup white flour
1/2 cup whole wheat flour
1/2 t. salt
1/2 cup oil
1/4 cup water
Filling:
1 cup pitted dates
2-1/2 T. cornstarch
2 T. whole wheat flour
3/4 t. salt
1 t. cinnamon
1/4 t. cloves
1/4 t. ginger
1/4 t. nutmeg
1 t. vanilla
3 T. oil
1-3/4 cup cooked carrots
1-1/2 cup milk

Preparation - Directions:

Crust: Mix all ingredients and press into 9 inch pie plate.
Filling: Process all ingredients thoroughly in blender. Pour over crust. Bake at 350° until set and golden brown, about 1 hour. Pie is firm when done. 6 to 8 servings.
