Carrot- Dill Salad

Ingredients:

1-1/2 lbs. Small to medium size carrots
Boiling salted water
1/2 cup olive or vegetable oil
1/4 cup white wine vinegar
1/2 t. white pepper
1/2 t. granulated sugar
Salt to taste
1 small red onion, minced
1 t. dill weed, dried

Preparation - Directions:

Pare and trim carrots. Drop into a large pot of boiling, salted water and cook until barely softened, about 5 minutes. Drain well and cool under cold running water. Cut into diagonal slices and combine with remaining ingredients. Mix well and chill. Drain and arrange on a lettuce-lined serving platter. Sprinkle with a little of the dressing and serve.
