Carrot Cookies

Ingredients:

1 cup shortening (part soft butter)
3/4 cup sugar
2 eggs
2 cups flour
2 t. baking powder
1 cup mashed cooked carrots
1/2 t. salt
3/4 cup shredded coconut
Orange butter icing
Icing:
3 T. soft butter or margarine
1-1/2 cup confectioners sugar
2 t. grated orange peel
about 1 T. orange juice

Preparation - Directions:

Heat oven to 400°. Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop by teaspoons about 2 inches apart onto lightly greased baking sheet. Bake 8 to 10 minutes or until  no imprint remains when touched lightly. Remove from baking sheet immediately and cool. Frost with orange butter icing.
Icing: Blend butter and sugar. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency. Makes 4 dozen cookies.
