Carrot Cake

Ingredients:

2 cups sugar
1 cup oil
4 eggs
2 cups grated carrots
1 8-1/4-oz. Can crushed pineapple (juice, too)
2 t. vanilla
2 cups flour
2 t. soda
2 t. cinnamon
1/4 t. nutmeg
1/4 t. salt
1 cup chopped nuts

Preparation - Directions:

Beat together sugar, oil and eggs. Add in carrots, pineapple and vanilla. Mix together dry ingredients and nuts; add to first mixture. Bake at 325° for 50 to 55 minutes in well greased and floured pan. Cool completely before frosting.
FROSTING:
1 3-oz. pkg. cream cheese
1/2 cube margarine
1/2 box (8 oz.) powdered sugar
1 t. vanilla
Beat at medium speed with electric beater until smooth.
