Bear Stew

Ingredients:

Bear: Use 2 to 4 lb. very lean meat cut in approximately 1 inch square pieces. Beef will do if no bear is available
Garlic – 6 to 10 cloves, minced
Onions – 2 or 3 medium to large, coarsely chopped
Tomato – 1 can sauce or 2 cans chopped or 4 large fresh, chopped
Wine – red, 1 cup
Sugar – 1 T.
Olive oil for browning
Salt and pepper to taste

Preparation - Directions:

Find the bear.
Brown the bear in olive oil and set the meat into the stew pot.
Sauté the garlic and onions and add them to the pot.
Add water to the pot, not quite covering the meat. Simmer two hours.
Add the tomato, wine, sugar, and more water if necessary to keep meat moist and simmer at least another half-hour.
If possible, let sit overnight in the refrigerator. If not, serve when you wish with rice, noodles or add potatoes and more water when the last ingredients are added.
