Albondigas

Ingredients:

2 hard cooked eggs, separate yolks from whites
1/2 cup cooked brown rice
1/4 cup softened bread crumbs
1/4 cup chopped green onion
1/4 cup chopped pitted ripe olives
1/4 t. dried rosemary, crushed
1 t. salt
Dash each ground cloves and cinnamon
1 lb. ground beef
raisins
3 cups water
1 can condensed tomato soup
2 cans tomato sauce
1 T. chili powder
dash salt (to taste)
1 beef bouillon cube

Preparation - Directions:

Combine chopped egg yolks, rice, bread crumbs, onion, olives, rosemary cloves, cinnamon and salt. Add beef and mix well. Using 1-1/2 tablespoon meat mixture for each meatball, wrap meat mixture around 3 raisins and shape into balls.
In large saucepan combine water, soup, tomato sauce, bouillon and salt. Bring to boil. Add meatballs. Simmer, covered 30 minutes. Stir in chopped egg whites. Ladle into bowls. Top each serving with grated jack cheese, additional olives, green onions and crushed corn chips.
