Proof’d hosts grand opening weekend
PROOF’D, A COMBINATION fine spirits retail shop and beer and wine tasting bar, marks its grand opening this weekend.

Valley residents Christian and Rebecca Chotkowski have opened the doors to a unique blend of tasting room and retail store located directly across from City Hall and the Plaza.
Proof’d is now serving artisan beers on tap and a well-chosen array of California wines in the tasting area, as well as offering a curated selection of fine spirits on the retail side.
The business is celebrating is official grand opening this weekend, Friday through Sunday, Oct. 26 to 28, with discounts on tastings and retail products, raffles and giveaways and live music.
Designed to be a convivial meeting place, Proof’d is a casual environment where visitors and locals can sample, sip and purchase a spectrum of hand-crafted beers, wines and spirits from a friendly and knowledgeable staff who can answer questions and share insights on the products.
“Our customers want to make informed purchases, try new things, and are seeking beer, wine and spirits that are hard to find elsewhere in town,” said Christian Chotkowski.
The creative pair, who met in art school, fashioned a setting that reflects the authenticity of its original structure and blends it with an urban, industrial edge. Using reclaimed materials, they designed and built one-of-a-kind furnishings and repurposed rustic items in novel and innovative ways, retaining the architectural features that give the setting a solid connection to its roots. The space has been a liquor store for more than 60 years, but the Chotkowskis elevated both the design and product line-up with Proof’d.
Located at 19 W. Napa St., Proof’d is open Sunday through Thursday from 10:30 a.m. to 9 p.m.; and Fridays and Saturdays from 10:30 a.m. to 9:30 p.m.
