Watermelon & Tomato Tartare with Laura Chenel Chevre and Basil

Ingredients:

  • 5 large heirloom tomatoes
  • 
1/2 seedless watermelon

  • 2 T. olive oil (extra virgin) 

  • 2 T. pine nuts, toasted

  • 1 bunch basil

  • 2 oz. Laura Chenel chevre goat cheese

 

Preparation - Directions:

Peel and seed tomatoes. Dice into small pieces. Dice watermelon the same size as tomatoes and combine. Season with salt and pepper. Add olive oil. Chop the basil. Crumble the goat cheese. Press watermelon and tomato mixture into a ring mold. Unmold onto serving plate. Crumble cheese around outside. Sprinkle with fresh cracked pepper, pine nuts and more olive oil.
