Spanish and Pasta Salad

Ingredients

  • 1 cup small seashells or other salad macaroni

  • 1 bunch fresh spinach
  • 
1 6-oz. jar marinated artichoke hearts, drained
  • 
1 can 4-oz. sliced ripe olives, drained
  • 
1/2 cup diced red onion
  • 
1 dozen cherry tomatoes, halved

  • 1/2 cup sour cream

  • 1/2 cup mayonnaise

  • 1 clove garlic (optional) minced fine or put through a garlic press

  • Salt to taste

Preparation - Directions:

Cook macaroni according to package directions. Drain well, rinse with cold water and drain again. Remove stems from spinach and discard. Wash the leaves, dry well and chop fine. In a large bowl combine artichokes. olives, onions, tomatoes, spinach and macaroni. In a smaller bowl, combine sour cream, mayonnaise, garlic and 1/4 tablespoon salt. Gently combine dressing with salad. Add additional salt if desired.
