Lemon Apple Cheesecake
Ingredients:
- 1-2/3 cup evaporated milk, chilled until icy
- 1 pkg. lemon jello
- 1 envelope unflavored gelatin
- 3/4 cup boiling water
- 1-8 oz. pkg. cream cheese
- 3/4 cup sugar
- 2 cups applesauce
- 1 t. vanilla
Graham Cracker Crust:
- 1 cup crushed graham crackers
- 2 T. brown sugar
- 1/4 cup melted butter
- 1/4 cup chopped walnuts
Preparation - Directions:
Cheesecake:
Mix lemon jello and gelatin. Add boiling water and stir until dissolved. Cool. Combine cream cheese and sugar; beat until fluffy. Stir in applesauce, vanilla and cooled jello mixture. Chill until well thickened.
Crust:
Mix together. Press into bottom and 1 inch up sides of 7 inch by 11 inch pan or a 9 inch by 13 inch pan.
Whip thickened apple jello mixture while gradually adding evaporated milk. Continue whipping until double in volume. Turn into crust. Sprinkle top with 1/2 cup chopped walnuts. Chill.
