Blueberry Layer Salad
- 2 cans blueberries
- 3 pkgs. lemon Jello
- 8 oz. cream cheese
- 1/2 pint whipping cream
- 3 T. sugar
- 1 t. vanilla
Preparation - Directions:
Drain blueberries and add water to liquid to make 3-1/2 ups. Heat this and add to 2 packages Jello. Dissolve Jello. Chill; then add berries and put into 2 quart mold. Let set in refrigerator.
Add 1 cup hot water to 1 package of Jello; dissolve; chill. Beat the cream cheese. Add chilled Jello to cream cheese and then fold in whipped cream that has sugar and vanilla added. Pour over the molded berries and chill until set.
You can add some fresh lemon juice to both mixtures. If you do, delete some of the other liquid. Let the cream cheese soften so it's easier to beat.
